The food was decent, but way too overpriced for what it was. The waiter we had was particularly forgetful as well and brought our table the wrong meals causing half the table to wait over ten minutes before their entrees came, after the other half of the table got theirs. I don’t know if it was the waiter or the coordination from the kitchen, but the same thing happened with the desserts. Happens once, it’s fine. Twice? Something is wrong. Would probably not go again. As lucky as you can get during Restaurant Week, we were seated by the owner Kim and really lucked out with our server Sam. Kim was so gracious as she told us about how we could order. When Sam came to take our order she helped us select the right delicious dishes for our dinner. The restaurant itself is modernized Old City Castlerock and is really cool. It has been serving up awesome dishes for 19 years. The Denver Restaurant Week menu is fantastic with your choice of 3 appetizers, 4 main course delights and last but NOT least 5 dessert choices. When it’s not restaurant week the menu selections multiply not to mention the beverages, for instance they offer you a choice of many different vodka, gin and rum drinks not to mention wine and beer and nonalcoholic selections to choose from. Simply put, The Union has everything you would want to feast on and the portions and service will be everything you could possibly hope for. Next time you’re looking for a fantastic dining experience come to The UNION Bistro, you’ll be glad you did. The portions of food are great, the side of macaroni is huge! My drink actually had a decent amount of alcohol in it unlike every other restaurant I've been to. I went in the afternoon and the music wasn't loud so I could actually unwind with my partner before his work and the service was excellent. This is my new favorite place for nice occasions out. Awesome place with many options. Super friendly staff and fun atmosphere of locals and travelers. Excellent service and attentiveness to our tastes. Saturday is half-priced Martinis made our visit very affordable. Excellent desserts. Broad choice on the menus. Many gluten free options. One of us has gluten allergy. We’ll be back again. Enjoy! In my 50 years of existence and tasting and eating different calamari…………. Union An American Bistro’s calamari was an exceptional. It was a bomb! Never tasted a calamari that good, it was so juicy compared to the norm or traditional way of cooking it dried. And it’s not just the calamari, it’s just for the starter! The three dishes that they recommend and served us was uniquely good. The food quality was good. The portions were super small though and the menu has literally only five dinners so I ended up with a chicken panini sandwich which tasted good but was super small and the bread was mush and crumbled after the first bite. Since the food was good I did 3 stars but I won’t be going back. In the two photo’s you could see the size and the bread after the first time I picked up the sandwich. Not worth $16. They also were late brining my daughters dish and they took my other daughters plate 2 seconds after she finished but nobody else was finished and as I said my other daughter didn’t even have her food so she kind of ate by herself. We went for happy hour before the rodeo. Love the Martin's, very strong, wouldn't recommend more than 2 🤪 I ordered the blackened chicken salad, very tasty. Food is great, service is a bit... Slow

We just enjoyed a great Happy Hour at Union in Castle Rock! Our server Brandon was wonderful… he offered great suggestions, our drinks were replenished often, food came quickly, and we didn’t feel rushed at all. The Happy Hour food is definitely worth exploring as you enjoy the drink specials. Next time I’m in Castle Rock (on my way from Denver to the Springs), we’ll be back to Union! Thanks guys! Great experience here, stopped by on a whim on a Saturday at that and they had a long wait, spoke to "someone" and they were able to get us sat outside (it was nice) for drinks and apps right away! The apps and drinks were great and the outside seating was nice as well. The indoor vibe looks cool, so I'd def. like to check that out some time as well!
