We stayed in Coral Bay 5 nights and dined at Rhumb Lines twice. They have an amazing chef. The flavors are combined in such a great way. The staff is friendly and the tropical atmosphere is relaxing. Our New Year's Eve dinner, and it was so wonderful! Fun, eclectic vibe, Asian influence meets boho/hippie, we loved the colors and textures and lights. The shrimp pad thai was AMAZING! Friendly kitties made us smile, as we were missing our own cat. We loved it so much, we reserved it for our last dinner on St John, but there was an illness, and they closed that night. We absolutely loved Rhumb Lines. Everything was delicious and my salmon entree was exquisite. Don’t forget to leave a bit of room for their light and not overly sweet key lime pie! The servers, although I was told they were short staffed, were friendly and attentive. The broad-smiling bartender even stopped by just to make sure we were all set. What an amazing place! I had the Pistachio encrusted goat cheese salad and the blackened mahi with a slice of Key Lime pie for dessert. It was all very good. The service was on par as well. We had a number of different people bringing us our food and drinks. The atmosphere is like hanging out in a botanical garden or something. Fantastic. Truly excellent food, incredibly flavorful. The steak with Sriracha butter is delightful. Chicken pot stickers and tuna salad are great, and the Szechuan noodles are fantastic.
