This level of cuisine in a town that is mostly known for the Sheetz easy access, fast foods and foliage is indeed worthy of praise!
It is tucked away in the quaint town of Bedford (away but not too far from the PA turnpike exit 146).
We were pleasantly welcomed to a cozy table, surrounded by a very eye catching decor.
We opted for the Korean pork BBQ Bao Buns, Mushroom Udon, Miso Ramen, Vietnamese Rice Noodles, and Spicy Green Curry Udon.
The Bao Buns were nothing short of amazing! Would make a more than ample appetizer for two!
The Vietnamese Rice Noodles were complex in flavor, with the crispness of the bean sprouts and carrots providing that fresh goodness that guarantees your taste buds that you have chosen much better dining than much of what can be found right off the exit, or anywhere within miles of the turnpike for that matter in a dining experience!
The Spicy Green Curry Udon was the PERFECT balance of spicy and savory to the very last spoonful! The fresh bok choy provided that delectable crunch paired with the coconut and basil again had our taste buds tantalize!
The Miso Ramen (which we added brisket to) was incredibly packed with flavor. The brisket added another level of robust flavor in itself. In fact, it was our opinion that when we venture back again to this treasure of an establishment we are opting to just go with no additional protein additions.
The NOODLE Dishes stand alone, as ordered - are delectable as they're listed! Additions of teriyaki egg and brisket were definitely worthy of the amazing they are to these dishes but by no means are they necessary because the FLAVOR of these dishes in and of themselves are nothing short of OMG INCREDIBLE!
This place is DEFINITELY worth seeking out! Worth any traveler finding the quaint offerings of Bedford itself - but not only that- it is THE place that BEDFORD will find being worthy in itself of coming to JUST FOR THEIR FOOD ALONE!

Delicious ramen, great service. The brisket was a good addition.
Tip: if you like spice, ask for a side of the amazing hot sauce they make in house and add to your taste.
This place is a wonderful addition to Bedford’s dining scene.

This is a hidden gem in Bedford. Excellent food and service. We were visiting Pittsburgh from NYC and stopped to have lunch. The food was excellent and the price was on the higher side.

Pork BBQ Korean Bao Buns
My husband and i had dinner there last night. This place was amazing. I highly recommend it. My husband and I both got the Miso Ramen with pork belly and shared an order of dumplings. The dumplings definitely seemed homemade and tasted fantastic and the Ramen was so incredibly tasty. My husband has been to Japan many times and has had lots of Ramen and he even says this Ramen is some of the best he ever had. We both moved out east from Seattle where there are lots of Ramen places and agree that if this place was in Seattle it would be packed with people. They also had a Japanese Whiskey cake that we shared. It was so moist and delicious and had us looking up recipes too ee if we could try to make it at home sometime.

Pork Gyoza Dumplings
I had dinner with my family at Nūdl, and I'm definitely coming back again. I got the Sweet and Spicy Ramen with tofu and the Yuzu-Ginger Boba. The broth has a great depth of flavor. The kimchi has an almost smokey aftertaste. The teriyaki egg adds a nice creaminess that cuts the spice. The noodles are flavorful and taste homemade. The portions are very generous and the staff if helpful and kind.

Broth on point, noodles on point, pickles are delicious and a satisfying Bao. Green curry is complex (and quite spicy), miso ramen is perfect. Only comment is the overcooked pickled egg. Just left and can’t wait to go back!

My wife and I just visited here to celebrate her birthday. She wanted to try something new, but I thought this strange place wouldn't be good since my preference is more towards the PA Dutch style cooking. We were pleasantly surprised with Asian food. We started our feast with the Pork BBQ Korean Bao Buns. I am not familiar with Asian food, I do not know what it was made of, but it was heavenly! Definitely a must try! We both ordered a soup. I tried the Sweet and Spicy Ramen, and my wife got the Vietnamese rice noodle soup. Both soups were delicious! I'm not sure how you pack this level of flavor into a simple bowl of soup! The sweet and spicy had a perfect level of heat. Not so hot that it is difficult to eat, but warm enough that you just have to go back for more. The boba tea tasted fresh and natural. The folks were friendly. We were welcomed upon entry, and management treated us like royalty during our visit...The atmosphere was perfect. It blended well with the location. Downtown Bedford is a historical place, and Nūdl has the right combination of modern and rustic. The ambience was great also. The bottom line is, we would rate this place at least 5 stars... Possibly more!

Excellent, well-executed food with layered, complex flavors that I felt was more than worth the moderate price. To find a restaurant like this anywhere would be great, but to find in Bedford, PA is even more amazing yet.

An absolute hidden gem! The food was very fresh and delicious, we had the bao buns, gyoza dumplings, yellow tail sushi, and the green papaya salad. Not one dish disappointed, they were all home runs, my personal favorite was the papaya salad with biltong (has a bit of a kick to it) I will definitely come back and try every single dish on their menu! Just phenomenal. Service was great and friendly too. As far as the location, there is plenty of parking and it was only a 5 minute drive from the omni hotel. Looking forward to going back there again!
